Wilted Arugula and Bacon Salad with Lime D

Ingredients:

  • * 3 cup baby arugula
  • * 1 cup sweet onion, sliced very thinly
  • * 3/4 cup bacon bit (about 6 slice, cooked crisp, and chopped)
  • * for the dressing
  • * 1 teaspoon fresh garlic, diced
  • * 1/4 cup lime juice (about 2 lime)
  • * 2 tablespoon water
  • * 4 tablespoon olive oil
  • * 2-3 tablespoon of agave nectar
  • * salt

Instructions:

  1. First, prepare the dressing so that that the flavors can set.
  2. Next, brown the bacon to a crisp in the microwave and chop into bacon bits.
  3. Slice the onion very thinly.
  4. In a large bowl, toss the arugula and onion with the lime dressing.
  5. Allow it to sit and wilt for about 5-10 minutes.
  6. Transfer to a serving platter and top with the bacon bits.
  7. Toss with the bacon bits just before serving out portions.
