HG’s Yumtastic Breakfast Burrito

Ingredients:

  • 1 medium low-fat flour tortilla, high fiber
  • 2 slices bacon
  • 1/2 cup egg beaters
  • 1 slice fat free or reduced fat cheese

Instructions:

  1. Cook bacon according to package directions and set aside
  2. Pour egg beaters into a pan sprayed with nonstick cooking spray and scramble over medium heat until fluffy and solid.
  3. Heat tortilla in microwave until slightly warm.
  4. Place cheese in the center of the tortilla and top with eggs and bacon.
  5. Fold in the sides of the tortilla and roll the tortilla up from the bottom.
  6. Heat in the microwave, seam side down, for an additional 15 to 20 seconds.
